Halfway between San Francisco and LA, Paso Robles offers a charming respite from what we ordinarily think of as California’s cosmopolitan side. Though warm for the southern Central Coast, Cabernet Sauvignon is the most prolific planting, and with this bottling from Blackletter, you can certainly taste why! With almost two years in 30% new oak, this wine has all the fabulous fruit and sumptuous spice we crave in a Cab. Strong tannins and a prodigious girth mark the palate—as well as a flavorful finish. Have it with stews and steak.
