Appassimento, the method used to produce Passito wines, is unique to the Veneto. It’s when grapes are picked and laid in the sun on mats to dry and concentrate. (It’s the same way the great Italian Amarone wine is made!) This added richness and depth is rarely found in a wine this price—and certainly is rarely accomplished so successfully! With notes of cherry and vanilla, this wine is full and round, but with soft tannins. Have it with meat dishes and also old cheeses!
