This mezcal gets its smooth floral aroma from Acatlan de Osorio, a high mountain and canyon that sits at an altitude of 1,216 meters above sea level. The flavor is a nice harmony of mineral and bitter, with a brief aftertaste of fresh agave.
Oven: Ground with wood and rocks for 3 days.
Grind: Mechanical roller mill.
Fermentation: 100 liter wooden baths with water from deep well and wild yeast.
