Fossil & Till Seneca Lake Pet-Nat SUSTAINABLE/NATURAL

Fossil & Till started in 2013 as a project between three friends with the goal of producing unorthodox, naturally-made wines in the picturesque Finger Lakes region of upstate New York. Here we have their pétillant naturel, or “pet nat”, made from 100% Riesling. Using a sparkling wine method that predates Champagne, this wine has little to no fining or filtration, there are small bits of sediments at the bottom of the bottle that add to the aromatic notes of apple, pear and ginger. Enjoy on its own with friends or with a cheese board!
