In the northern reaches of Burgundy (not too far from Paris), in and around the small village of Chablis, comes some of the driest, most crisp Chardonnay in France. The soil surrounding the majority of the region is comprised of limestone, clay and fossilized oyster shells which help give the mineral and flinty nature to these wines. Fresh and lively with green apple, lemon, and a seductive minerality, the palate is zesty, lean, and direct with a long finish. The perfect aperitif, it also pairs well with sushi, goat cheese, and other lighter-fare.
