This all-barley (majority of which malted) whiskey's secret is the finishing in intensely charred barrels. They use traditional American Oak barrels and burn them a lot (in the whiskey world, barrels are typically charred from levels one to four, but theirs are scorched to LEVEL FIVE for added depth of flavour), see them in action here (please don't try this at home). The smokiness therefore comes from the charred barrels, rather than the peated barley, which also add deeper, more complex flavors with hints of vanilla, spice, caramel, butterscotch.
