Bigallet China-China Amer is a rich, bittersweet French orange-based liqueur produced by Bigallet since 1875. It is made from a blend of sweet and bitter orange peels, macerated in beet neutral alcohol and re-distilled in alembic stills. The flavor is amplified by plants, seeds, and spices, including gentian and cinchona bark, and the deep amber color comes from the addition of caramel. At 40 % ABV, it offers aromas of bitter orange peel, marmalade, and licorice, with assertive cardamom and black pepper spice on the palate. Long and zesty on the finish, it works beautifully in cocktails or as a digestif.
